- ♡ 4 Small Sized Beetroot – Parboil, Remove Skin, Quarter and Roast (Best prepare beetroot the night before)
- ♡ 2 Fresh Mandarins - Segmented and De-Seeded
- ♡ 100g Creamy Feta (Danish) – Cut Into Cubes
- ♡ ½ Cup Pecan Nuts - Chopped
- ♡ Creamy Mustard Dressing: In A Jar Mix: ¼ Cup Plain Greek Yogurt, 1 Tablespoon Extra-Virgin Olive Oil, 1 Tablespoon Dijon Mustard, 1 Teaspoon Honey, 2 Tablespoons Lemon Juice, and Freshly Ground Black Pepper To Taste.
Instructions
- ♥ Put the mixed green salad in a serving bowl, top with roasted beetroot, mandarin segments, feta, and pecan nuts. Drizzle with creamy mustard dressing.
