Ingredients
- ♡ ½ Cup Extra Virgin Olive Oil
- ♡ 1 Garlic Clove - Crushed
- ♡ 1 Heaped Tablespoon of Pine Nuts
- ♡ ½ Cup Vegetable Stock
- ♡ 500g Broccoli - Cut Into Florets And Stems Thinly Sliced
- ♡ ⅓ Cup Parmesan Cheese
- ♡ 300g Pasta Of Your Choice – We Used Spiral Pasta
- ♡ To Serve: Extra Parmesan Cheese
Instructions
- ♥ In a sauce pan with a lid, heat oil and add garlic and stir fry until aromatic add pine nuts and slightly toast. Add stock and broccoli, put the lid on and reduce heat simmer until stock has evaporated and broccoli is tender.
- ♥ Using a stick blender roughly process the broccoli pesto and then stir through the parmesan cheese. Set aside and keep warm.
- ♥ Boil the pasta to your taste. Stir pesto into pasta and season with salt and pepper. Divide among serving dishes and sprinkle with extra parmesan.
