Ingredients
- ♡ 1 Tbls Extra Virgin Olive Oil
- ♡ 1 Large Onion – Sliced
- ♡ 1 Leek – Washed & Sliced
- ♡ 1 Garlic Clove – Crush.
- ♡ 2 Med Carrots – Diced 1 Cm Cubes
- ♡ 2 Celery Sticks – Sliced
- ♡ ½ Cup Pearl Barley (Seeds), Soaked Overnight
- ♡ 1 Litre Vegetable Stock. ( We Used Massel Brand)
- ♡ ¼ Cup Parsley – Chopped
Instructions
- ♥ Heat 1 oil in a pan. Add onion fry until soft. Add garlic, leek, carrot and celery stir fry.
- ♥ Rinse and drain barley and add to the pan stir fry 1 minute.
- ♥ Add vegetable stock and bring to boil, simmer for 15 minutes or until barley is soft. Add water if it gets too thick.
- ♥ Remove from heat add parsley stir, season to taste and serve
