Ingredients
- ♡ 15 rice paper rounds
- ♡ 100 g rice vermicelli noodles (cooked)
- ♡ 1 Cup Iceberg Lettuce sliced
- ♡ 2 Carrots grated
- ♡ 1 Cucumber sliced
- ♡ 1 Avocado sliced
- ♡ 15 Coriander sprigs
- ♡ To Serve: Sweet chilli sauce and steamed Edamame beans
Instructions
- ♥ Place 1 rice paper round in a medium bowl of lukewarm water for 15 seconds (or until just soft).
- ♥ Remove and place on a clean chopping board.
- ♥ Top with vermicelli noodles, lettuce, carrot, cucumber, avocado and coriander.
- ♥ Fold ends in and roll up firmly to enclose filling.
- ♥ Repeat with remaining rice paper.
- ♥ Serve with sweet chilli sauce and steamed Edamame beans.
