Ingredients
- ♡ 3 Zucchini – Sliced In Ribbons
- ♡ Salt
- ♡ 100g Feta – Cut In Cubes
- ♡ 250g Punnet Cherry Tomatoes
- ♡ Bamboo skewers
- Marinade:
- ♡ 1 Tablespoon Extra Virgin Olive Oil
- ♡ 2 Tablespoon Lemon Juice
- ♡ ½ Teaspoon Oregano
Instructions
- ♥ Sprinkle salt on the Zucchini ribbons and leave them to sweat and soften. Rinse and pat dry.
- ♥ Wrap zucchini ribbon around each feta cube and alternating with cherry tomato thread the wrapped feta onto a skewer. Place into a baking dish
- ♥ Combine the ingredients for the marinade in a jar, shake to combine and pour over the skewers. Allow to marinade for an hour.
- ♥ Heat a grill plate and grill skewers to your taste. Enjoy!
