Ingredients
- ♡ 2 Large Beetroot Bulbs
- ♡ 2 Tbls Apple Cider Vinegar
- ♡ 1 Tbls Extra Virgin Olive Oil
- ♡ Salt to taste
Instructions
- ♥ Wash beetroot bulbs and place them in a pot of cold water.
- ♥ Bring to boil and cook until beetroot is just tender. To check: a sharp knife will easily push through the beetroot.
- ♥ Leave to cool in the pot or overnight in the fridge.
- ♥ Using gloves, rub off the outer skin and chop the beetroot into 2 cm squares
- ♥ Place the beetroot in a bowl and dress with oil, vinegar and salt to taste.
- ♥ Enjoy as a tasty side veggie or a guilt free snack!
