Ingredients
- ♡ 2 cups frozen Corn and Peas
- ♡ 4 eggs, lightly whisked
- ♡ ½ cup cream or milk
- ♡ ½ cup chives, finely chopped
- ♡ ½ cup vintage cheddar cheese, grated
- ♡ Salad: 1 Pear Beurre Bosc, ½ cup chopped walnuts, 150 g rocket, 50 g shaved Parmesan
- ♡ Salad Dressing: 2 Tbls Oil, 2 Tbls white balsamic vinegar
Instructions
- Corn & Pea Frittata:
- ♥ Preheat oven 200 ºC Grease 12 hole muffin pan.
- ♥ Whisk the eggs and cream together, add the corn & Peas, chives and cheddar cheese stir to combine. Spoon mixture evenly among the prepared pan.
- ♥ Bake for 15 minutes or until cooked through. (Cool and Freeze at this point)
- ♥ Serve Frittatas with pear salad.
- Pear Salad:
- ♥ Finely slice Pear and arrange on rocket sprinkle walnuts.
- ♥ Mix extra virgin oil with balsamic vinegar pour on salad salt to taste.
- ♥ Gently mix through with parmesan cheese.
