Ingredients
- ♡ 2 ½ Tbsp Extra Virgin Olive Oil
- ♡ 1 Large Onion- Diced
- ♡ 4 Carrots - Diced
- ♡ 4 Celery Sticks - Diced
- ♡ 2 Tomatoes - Diced
- ♡ 7 Cups Vegetable Stock
- ♡ 3 Medium Potatoes - Peel And Dice Into 2cm Cubes
- ♡ ⅓ Cup Fresh Parsley - Chopped
- ♡ 2 Bay Leaves
- ♡ 1 ½ Cups Green Beans – Cut Into 3cm Lengths.
- ♡ 1 Cup Frozen Peas
Instructions
- ♥ In a large stockpot over medium heat the olive oil, add onions, carrots, and celery. Sauté 5 minutes stirring constantly.
- ♥ Add tomatoes and stir fry. Add vegetable stock, potatoes, parsley, and bay leaves. Season with salt and ground pepper to taste.
- ♥ Bring the contents to a boil, reduce heat to a simmer and add the green beans. Continue to simmer until potatoes are tender.
- ♥ Add peas and simmer for an additional 5 minutes.
