Ingredients
- ♡ 1 tablespoon of extra virgin olive oil
- ♡ 1 onion - chopped
- ♡ 1 Tablespoons Moroccan (Harissa) Seasoning
- ♡ 400g Can Crushed Tomatoes
- ♡ 2 X 400g Cans Chickpeas – Rinsed and drain
- ♡ 2 tablespoons of parsley – finely chopped
- ♡ To serve: Couscous and steamed broccoli
Instructions
- ♥ Heat a non-stick frying pan over medium heat. Add onion and stir fry until onion is translucent.
- ♥ Add Moroccan seasoning and stir fry until aromatic.
- ♥ Add tomatoes, stir to combine and reduce heat and simmer for 15 minutes
- ♥ Add chickpeas and stir bring to a simmer and cook for few minutes.
- ♥ Remove from heat and stir through the parsley
- ♥ Serve with couscous and steamed broccoli.
