Ingredients
- ♡ 1 quantity of pizza dough See Recipe
- ♡ 2 Tablespoons Extra Virgin Olive Oil (EVOO)
- ♡ 1 Clove Garlic – crushed
- ♡ 2 tomatoes diced
- ♡ 500g Mushrooms – sliced
- ♡ 1.4 Cup water
- ♡ 2 Tablespoons tomato paste
- ♡ 2 sprig fresh thyme
- ♡ 1 ½ Cups Mozzarella cheese
- ♡ Extra EVOO
Instructions
- ♥ Preheat oven 200ºC
- ♥ Divide the dough into 2 and roll out onto 2 pizza trays. Cover.
- ♥ In a large wok with a lid and heat EVOO and add garlic, stir-fry until aromatic, add tomatoes stir fry add mushrooms and water stir fry add the lid and cook for 2 minutes or until the mushrooms soften.
- ♥ Stir through the tomato paste and thyme and cook until the water has evaporated. Cool the mixture a9about 10 minutes or so)
- ♥ Add half the cheese to the base of one pizza top with mushrooms then top with remaining cheese. Cover the mushrooms topping with the other pizza base and tuck the edges underneath to enclse th mixture.
- ♥ Score the top with the point of a knife and brush with extra EVOO.
- ♥ Bake in the oven for 30 – 40 minutes or until golden ans sounds hollow to tap.
- ♥ Serve with your favourite salad.
