Ingredients
- ♡ 2 Tbls Extra Virgin Olive oil
- ♡ 1 Medium Onion, chopped
- ♡ 2 Tomatoes, chopped
- ♡ 4-6 Cups water, boiling
- ♡ 2 cups uncooked pasta
- ♡ 4-5 basil leaves, chopped
- ♡ 2 Cups Frozen Peas
- ♡ To Serve: Finely Chopped parsley, lemon juice and parmesan cheese
Instructions
- ♥ Heat oil in a large sauce pan. Add onion, cook stirring occasionally, until onion begins to soften.
- ♥ Add tomatoes and stir fry, add 4 cups water and bring to boil, add pasta and enough water to cover the pasta, cook adding water if necessary. Cook until pasta is al dente (not over cooked).
- ♥ Stir through basil and peas, cooking until peas are heated through.
- ♥ Season to taste and serve with parsley, lemon juice and parmesan cheese
