Ingredients
- ♡ 2 Tbls extra virgin olive oil
- ♡ 1 garlic clove - crushed
- ♡ 400g mixed veggies
- ♡ 1 can red kidney beans
- ♡ 2 Tbls grated Parmesan cheese
- ♡ 1 chopped fresh parsley (optional)
- ♡ Steamed rice to serve
Instructions
- ♥ Heat oil in a large pan add garlic and fry until aromatic.
- ♥ Add veggies stir fry until heated through, mix in beans and stir fry until hot. Remove from heat.
- ♥ Top with Parmesan cheese and parsley.
- ♥ Serve with steamed rice.
