Ingredients
- ♡ 2 cups breadcrumbs
- ♡ 450g pack frozen chopped spinach - thawed and drained
- ♡ 3 large eggs - beaten
- ♡ ½ cup grated Parmesan cheese
- ♡ ½ cup extra virgin olive oil
- ♡ ¾ Cup spring onions – chopped
- ♡ Salt and pepper to taste
- ♡ Serve with Tzatziki (Greek Cucumber Yogurt dip)
Instructions
- ♥ Preheat the oven to 200°C
- ♥ Combine breadcrumbs, spinach, eggs, Parmesan cheese, oil, salt and pepper in large bowl.
- ♥ Mix very well. Use your hands to shape spinach mixture into walnut-sized balls and place on a baking sheet.
- ♥ Bake in the preheated oven until cooked through and lightly browned, about 25 minutes.
