Ingredients
- ♡ 6 Medium Tomatoes
- ♡ 5 Eggs – Lightly Whisked
- ♡ ½ Teaspoon Sweet Paprika
- ♡ ¼ Cup Finely Chopped Parsley
- ♡ Salt And Pepper To Taste
- ♡ 6 Mozzarella Cheese Rounds
Instructions
- ♥ Cut off the upper parts of tomatoes and remove and finely chop the cores.
- ♥ In a bowl combine the chopped tomato cores, eggs, sweet paprika, parsley and season with salt and pepper to taste. Mix well and put the egg mixture into a jug.
- ♥ Oil a baking dish and place the tomatoes in. Preheat oven to 200°C.
- ♥ Pour the egg mixture evenly into each tomato and bake for 15 minutes or until the egg mixture is firm.
- ♥ Remove from oven and top each tomato with the mozzarella round and return to the oven and bake until the cheese has melted.
- ♥ Serve with toast for breakfast or brunch and enjoy!
