Ingredients
- ♡ 6 Tbls olive oil
- ♡ 500g medium firm tofu – cut in cubes
- ♡ 4 - 5 Cups Mixed Vegetables. We used; 4 carrots-chopped, 300g beans-chopped, 1 bunch asparagus-chopped, 1 cup peas, 1 head of broccoli-cut into small florets.
- ♡ 1 Tbls grated ginger
- ♡ 1 Clove garlic - crushed
- ♡ ¼ Cup soy sauce
- ♡ Steamed rice to serve
Instructions
- ♥ Heat 3 Tbls oil in a pan and gently fry the tofu until golden and set aside
- ♥ Heat the remaining oil in a wok or a large flame proof casserole dish.
- ♥ Add vegetables and stir fry until vegetables change colour. Add ginger and garlic stir fry until aromatic. Add soy sauce and ½ water reduce heat and steam gently for 5 minutes or until vegetables are cook but still firm.
- ♥ Add the fried tofu to the vegetables and gently stir.
- ♥ Serve with steam rice
