Ingredients
- ♡ 150g grated tasty cheese
- ♡ 2 Shallots, finely chopped
- ♡ ¼ cup parsley, chopped
- ♡ 1 Tbs butter, melted
- ♡ 6 med potatoes, (approx 800g) par boiled, sliced 3mm.
- ♡ 5 eggs
- ♡ Approx 40g butter, chopped in 1cm cubes.
- ♡ To serve: Grilled capsicum
Instructions
- ♥ Grease with butter and line a 20 cm round cake tin with baking paper.
- ♥ Mix together; cheese, shallots and parsley.
- ♥ Add melted butter to the bottom of the prepared tin and layer with potato slices to cover the bottom.
- ♥ Beat one egg and pour evenly over the potato.
- ♥ Add ⅓ of the cheese mixture dot with butter, layer with potatoes. Repeat 2 times.
- ♥ 4th layer: lay remaining potato, beat remaining two eggs and pour over potato, dot with butter, press down onto the potato so the egg resurfaces.
- ♥ Bake in a 200ºC preheated oven for 40 to 50 minutes or until set and cooked through.
- ♥ Serve with grilled capsicum.
