Ingredients
- ♡ 1 Tbls Extra Virgin Olive oil
- ♡ 1 Onion - chopped
- ♡ 1 Large carrot – chopped
- ♡ 1 L Vegetable stock
- ♡ ½ Cup tubular pasta
- ♡ Seasoning: parsley and lemon juice
Instructions
- ♥ Heat oil in a sauce pan and fry the onion until soft.
- ♥ Add carrot and stir fry.
- ♥ Add stock and bring to the boil, and then simmer for 10 minutes to develop flavour.
- ♥ Add pasta and cook until al dente (firm to the bite) season with parsley and lemon juice.
- ♥ Serve with crusty bread and enjoy!
