Ingredients
- ♡ 1 Tablespoon of Extra Virgin Olive Oil
- ♡ 1 Onion - Diced
- ♡ 1 Clove of Garlic - Crushed
- ♡ 1 Teaspoon of Sweet Paprika
- ♡ 1 Red Capsicum - Diced
- ♡ 400g Can Chopped Tomatoes
- ♡ 1 Tablespoon of Tomato Paste
- ♡ 1 Cup Vegetable Stock
- ♡ 400g Can White Beans - Drain and Rinse
- ♡ Salt and Black Pepper to Season
- ♡ 1 Tablespoon Fresh Parsley - Chopped
- ♡ 1 Tablespoon Fresh Basil - Chopped
- ♡ To Serve: Roast Potatoes
Instructions
- ♥ Heat oil in a fry pan and add onion and fry until golden and softened. Add in the peppers and garlic and fry for a couple more mins. Add the paprika and mix to coat.
- ♥ Add in the chopped tomatoes, tomato paste and stock, stir until all mixed. Bring to a boil, cover, and simmer for 15 minutes.
- ♥ Stir through beans and simmer for 2 more minutes. season as needed with salt and black pepper.
- ♥ Stir in the chopped fresh parsley and basil and service. Serve with roast potatoes and enjoy!
