Ingredients
- ♡ 1 Tbls Extra Virgin Olive Oil
- ♡ ½ Butternut pumpkin, peeled and cut in cubes
- ♡ 1 Tbls Extra Virgin Olive Oil (for onion)
- ♡ 1 Small red onion
- ♡ 1 ½ cups cooked couscous (prepare according to packet direction)
- ♡ Fresh thyme for seasoning
- ♡ 2- 3 Witlof (endive) wash and remove leaves
Instructions
- ♥ Heat oven to 200ºC
- ♥ Heat oil in a flame proof oven pan and add pumpkin, stir-fry until golden
- ♥ Bake in oven 15 minutes or until tender.
- ♥ In a sauce pan fry onion until soft, stir through the couscous, then gently mix in the roasted pumpkin.
- ♥ Season with fresh thyme, spoon the mixture onto the witlof leaves and enjoy!
