Ingredients
- ♡ 1 Eggplant – Sliced
- ♡ 2-3 Carrots – Cut In Half
- ♡ 1 Large Zucchini – Sliced
- ♡ 2-3 Small Peppers Or Capsicum – Sliced Or Cut In Half
- ♡ 3-4 Small Tomatoes – Cut In Half
- ♡ 1 Spanish Onion – Sliced
- ♡ Extra virgin olive oil for brushing
- Marinade – Mix in a jar
- ♡ ¼ Cup Extra Virgin Olive Oil (EVOO)
- ♡ 1 Tablespoon Lemon Zest
- ♡ Bunch Of Your Favourite Mixed Herbs Chopped
- ♡ Salt And Pepper To Taste
Instructions
- ♥ To prepare this dish I used a grill press because it’s easy and quick.
- ♥ If you are using a grill heat it and grease it well.
- ♥ Then for either method; dry vegetables with paper towels before brushing them well with EVOO.
- ♥ Grill the vegetables about 2-3 minutes per side (this will take some time depending on how many slices you got out of your vegetables).
- ♥ Arrange the vegetables on a serving plate, drizzle with the marinade evenly and serve
- ♥ Enjoy!
