Ingredients
- ♡ 1 Tablespoon Cold Pressed Canola Oil
- ♡ 1 Onion – Chopped
- ♡ 1kg Frozen Peas
- ♡ 4 Cup Vegetable Stock
- ♡ ½ Cup Coconut Milk
- ♡ ⅓ Cup Fresh Parsley - Chopped
- ♡ Salt and Black Pepper, To Taste
- ♡ To Serve: Croutons
Instructions
- ♥ Heat oil in a large pot and add onion, stir fry until translucent. Add peas and continue to stir fry.
- ♥ Add stock and bring to the boil then reduce heat, simmer for 8-10 minutes. Stir through coconut milk and parsley and simmer for another 10 minutes.
- ♥ Using a stick blender carefully blend the soup until smooth or to you taste. Season with salt and pepper.
- ♥ Serve hot with crotons and enjoy!
