
Ingredients
- ♡ 1 cup short grain rice
- ♡ ½ cup grated Mozzarella cheese
- ♡ 2 Tablespoons Parmesan cheese
- ♡ 2 eggs
- ♡ 1 tablespoon chopped parsley
- ♡ Salt and pepper, to taste
- ♡ Dried breadcrumbs
- ♡ Oil for shallow frying
Instructions
- ♥ Boil rice until just undercooked, in a colander rinse under cold water and let it drain
- ♥ Mix eggs, cheeses, parsley, salt and pepper into the rice.
- ♥ Cover and refrigerate for 2- 3 hours.
- ♥ Using wet hands roll rice into small balls or you can use food safety gloves.
- ♥ Roll balls in breadcrumbs; put them on a plate ready for frying.
- ♥ Heat oil in a fry pan and fry balls until golden, drain on paper towels, serve warm.
