
Ingredients
- ♡ 1 Tablespoon Butter
- ♡ 1 Tablespoon Extra Virgin Olive Oil
- ♡ 1 Large Onion - Finely Chopped
- ♡ 5 Large Celery Ribs - Very Finely Chopped
- ♡ 1 Clove Garlic – Crushed
- ♡ 2 Cups Vegetable Stock
- ♡ 2 Tablespoons Corn Flour
- ♡ ½ Cup Cream
- ♡ Salt And Pepper To Taste
Instructions
- ♥ Melt the butter and oil in a stock pot over medium-high heat and cook the onions, celery and garlic until soft and translucent, 5-7 minutes.
- ♥ Add the flour and cook for another minute. Add the vegetable stock and cream, stir until the mixture is smooth.
- ♥ Bring the soup to simmer for 15 minutes. Using a stick blender, blend the soup to your desired smoothness. I like mine a little chunky.
- ♥ Add salt and pepper to taste serve hot with crusty dark grainy bread - enjoy!
