Ingredients
- ♡ 1 Zucchini – Sliced In Rounds
- ♡ 1 Red Capsicum – Sliced In Wedges
- ♡ 12 Button Mushrooms – Quartered
- ♡ ½ Cup Extra Virgin Olive Oil
- ♡ 2 Cups Butter Lettuce – Roughly Chopped
- ♡ Shaved Provolone Cheese Or Substitute
- ♡ Pine Nuts – Toasted
- ♡ Dressing: Mix In A Jar A Ratio Of: 2 Tablespoons Balsamic Vinegar To 1 Tablespoon Extra Virgin Olive Oil.
- ♡ To Serve: Crusty Fresh Bread.
Instructions
- ♥ Mix in a large bowl, zucchini, capsicum, mushrooms, pour in oil and coat vegetables.
- ♥ Heat a grill pan and grill vegetables, then set aside to cool and refrigerate for an hour or overnight.
- ♥ Place lettuce on to a serving plate gently mix through the grilled vegetables. Top with cheese and sprinkle toasted pine nuts.
- ♥ Drizzle with dressing and serve with crusty bread. Enjoy!!
