
Ingredients
- ♡ 8 Silverbeet leaves
- ♡ 1 tablespoons extra virgin olive oil
- ♡ 1 large onion – finely chopped
- ♡ 1 garlic clove – crushed
- ♡ 1 teaspoon ground cumin seeds
- ♡ 1 400g can of lentils – rinsed and drained
- ♡ 1 ⅓ cups kumara – cooked and mashed
Instructions
- ♥ Steam silverbeet until just wilted and rinse under cold water pat dry
- ♥ In a pan heat oil and stir fry onion until soft add garlic and cumin and fry until aromatic.
- ♥ Add lentils, turn off the heat and stir fry until combined. Cool.
- ♥ Divide lentil mixture amount the silverbeet leaves. Fold in sides of leaves, roll up to enclose filling.
- ♥ Place parcels on top of a steamer and steam for 8 minutes or until heated through. If you don’t have a large steamer then use a roasting pan with a rack place the parcels on the rack add a cup or so of boiling water cover with foil and bake until heated through.
- ♥ Serve with lemon and your favorite salad – YUM!!
