
Ingredients
- ♡ 2 cups of dried brown lentils, soaked overnight
- ♡ 1 large onion, chopped
- ♡ 400g can chopped tomatoes
- ♡ 2 Tbls tomato paste
- ♡ 5 - 6 bay leaves
- ♡ Salt to taste
- ♡ ½ tsp cinnamon or to taste
- ♡ To Serve: Crusty whole grain bread
Instructions
- The flavour of this soup improves if made the night before.
- ♥ Heat 2 Tbls oil & fry onion until soft,
- ♥ Add drained washed lentils
- ♥ Add tomatoes, and tomato paste, bay leaves, salt, cinnamon,
- ♥ Add 1 litre water
- ♥ Bring to boil, then simmer for 20 – 30 minutes or until lentials are soft. Add additional water if necessary.
- ♥ Service with crusty whole grain bread
