
Ingredients
- ♡ 1 Kg Whole Baby Carrots - Peeled
- ♡ 2 Tablespoons Olive Oil
- ♡ 2 Cans Of French Lentils – Rinsed and Drained
- ♡ Dressing: 2 Tablespoons Fresh Orange Juice, ½ Teaspoon Chili Flakes, ¼ Teaspoon Cumin, ⅛ Teaspoon Cinnamon
- ♡ ¼ Cup Chopped Italian Parsley
- ♡ To Serve: Tzatziki Sauce (Yogurt And Cucumber Dip) and Dukkah.
Instructions
- ♥ Preheat oven to high
- ♥ Place the carrots on baking sheet and drizzle with oil, season with salt and pepper mix to well coated.
- ♥ Cover with foil and place in the hot oven for 12 minutes. Uncover and continue roasting 15-20 minutes, stirring once halfway through. Roast until tender.
- ♥ Put the lentils on a serving plate and then top with the hot carrots cover with foil for 5 minutes.
- ♥ Make the dressing in a jar with a lid adding the dressing ingredients, shake to combine.
- ♥ Serve the carrot and lentil salad with dressing, parsley, tzatziki and dukkah. Enjoy!
