
Ingredients
- Dough
- ♡ 3 Cups Plain Flour
- ♡ 2 x 7g Sachet Instant Dry Yeast
- ♡ ½ Tsp Salt
- ♡ 1 ¼ Cup Warm Water
- ♡ 3 Tbls Extra Virgin Olive Oil
- ♡ Extra Flour
- Filling:
- ♡ 2 tablespoons extra virgin olive oil
- ♡ ⅓ cup red onion - finely chopped
- ♡ 1 bunch (400g) fresh spinach- roughly chopped
- ♡ 150g mozzarella cheese - grated
Instructions
- ♥ Preheat oven to 200 degrees C. Line 2 baking sheet with parchment paper.
- ♥ To make the dough
- • Sift flour into a large bowl. Add yeast and salt. Mix well
- • Combine warm water and oil in a cup. Add to flour mixture. Using a round butter knife in cutting motion mix until the dough comes together.
- • Use extra flour and your finger tips to gently shape the dough into a soft disc.
- • Turn onto a lightly-floured surface split the dough in half, and using a rolling pin roll out each dough to a long oval shape and place them onto the prepared baking sheets.
- ♥ To make the spinach filling:
- • Heat oil in a pan over medium heat, add in onion and cook until soft. Add in a few large handfuls of spinach and cook, stirring, until wilted.
- • Continue adding spinach a few handfuls at a time until stir fry until spinach has wilted and moisture has evaporated. Remove from heat and season with salt and pepper to taste.
- ♥ To make the pides:
- • Spread ½ of spinach mixture and ½ of the cheese along middle of dough, leaving 5cm edge with no filling. Fold sides of dough over filling and pinch ends closed. It will open up
- • Place pide in the oven and cook for 15 minutes, swap shelves, cook for a further 15 minutes or until lightly brown.
