Ingredients
- ♡ 1 ½ Tablespoon Extra Virgin Olive Oil (EVOO)
- ♡ 1 Onion - Chopped
- ♡ 1 Stalk Celery - Chopped
- ♡ 3 X Zucchini - Chopped
- ♡ 3 Large Sprigs Of Fresh Thyme – Remove The Stork
- ♡ 1 Litre Of Vegetable Stock
- ♡ Lemon Juice To Taste
- ♡ To Serve: Roasted Sesame Seeds
Instructions
- ♥ Heat EVOO in a large saucepan over a medium heat. Add onion and celery and stir for around 5 minutes. Add zucchini and thyme until zucchini turns bright green. Add hot stock and increase to a boil.
- ♥ Reduce the heat and simmer for about 5 minutes until the zucchini is cooked.
- ♥ Using a stick blender blend to your desired consistency.
- ♥ Add lemon and season to taste
- ♥ Serve with bread and topped with roasted sesame seeds
